  • 1/4 cup red wine vinegar
  • 1 tsp salt
  • 2 tsp oregano
  • 1/2 tsp basil
  • 1/2 lemon juiced

Salad

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 2 cups english cucumbers chopped
  • 10 oz tri color cherry tomatoes sliced in 1/4 pieces
  • 6 oz kalamata olives pitted and cut in half
  • 1 cup spinach
  • 1 cup vegan feta cheese
  • 15 oz chickpeas drained
