Pickled red onion
- 1 red onion pealed and sliced thin
- 1/2 cup water
- 1/2 cup white vinegar
- 1 garlic clove
- 1 tsp pepper corns
Dressing
- 1 cup olive oil extra virgin
- 1 tsp garlic minced
- 1/4 cup red wine vinegar
- 1 tsp salt
- 2 tsp oregano
- 1/2 tsp basil
- 1/2 lemon juiced
Salad
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 2 cups english cucumbers chopped
- 10 oz tri color cherry tomatoes sliced in 1/4 pieces
- 6 oz kalamata olives pitted and cut in half
- 1 cup spinach
- 1 cup vegan feta cheese
- 15 oz chickpeas drained
Vegan greek quinoa salad
Chop red onions and place in a jar
Pour in vinegar and water and pickle onions over night.
Place all salad ingredients into a large bowl.
Mix all ingredients together.
