These roasted herb crusted purple potatoes, with fresh herbs are the perfect side dish to any protein. I have never seen purple potatoes that were purple all the way through. I consume a lot of potatoes and have had a special love for them since I was a kid. So, I was quite surprised when I came across these gorgeous baby potatoes. Needless to say, I became addicted and this is my favorite potato recipe thus far. You can either do baked purple potatoes or air fried if you have an air fryer.

The purple potatoes I purchase is from the little potato company. I have tried multiple brands of purple potatoes, and I personally think these are the best. Do you know what makes these herb crusted purple potatoes so delicious? That’s right, the freshness of the herbs. There is nothing like a mix of fresh, garlic, rosemary and thyme mixed in with a good quality extra virgin olive oil. While this little potato is already packed with big flavor on its own, these fresh herbs make this side dish pop. Some people say these little spuds taste like any other. I personally disagree. I believe they are way more flavorful.

Ingredients

  • Baby purple potatoes
  • Garlic minced
  • Thyme minced
  • Rosemary minced
  • Parsley minced
  • Olive oil
  • Salt
  • Pepper

Firstly, you want to preheat your oven to 400 degrees F. Secondly, you obviously want to get those little spuds cleaned up. Thirdly, add oil to a small bowl, add in the garlic, rosemary, thyme, salt and pepper and stir well. Finally, pour the mixture over the potatoes slowly, stopping and tossing the potatoes to make sure each potato has a even coat of the fresh herbs and oil. Bake for 40 mins or until fork tender and sprinkle with fresh chopped parley. Serve potatoes with chicken, beef, pork or fish. Enjoy your roasted, baked herb crusted purple potatoes! Ingredients

  • 1 1/2 pounds Baby purple potatoes
  • 1 tbsp garlic minced
  • 1 tbsp fresh thyme minced
  • 1 tbsp fresh rosemary minced
  • 1 tbsp fresh parsley minced
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Preheat oven to 400 degrees. In a small bowl, add oil, salt, pepper, minced rosemary, minced thyme and minced garlic and stir until well combined. Wash and place potatoes into a baking dish. Slowly drizzle herb mixture over the top of the potatoes, stopping and tossing the potatoes frequently. You want the oil and herb mixture spread out evenly over the potatoes. Place into the 400 degree oven for 40 to 50 mins or until fork tender. Meanwhile, chop up some parsley sprinkle on the potatoes, serve and enjoy!
