The best fish!

Rainbow trout is hands down my favorite fish! The pink flaky fish has this delicious, lite flavor to it. Rainbow trout is also great grilled or smoked, the flesh just soaks up smoke flavor and it is absolutely amazing. You can use this exact recipe with salmon if you’re not a fan of trout, or if you already have salmon on hand. I love salmon as well, but trout has a better flavor in my opinion. Pair this fish with some fresh squeezed limeade!

12 cheap ingredients

  • Rainbow trout filet
  • Olive oil
  • Salt
  • Pepper
  • Oregano
  • Onion powder
  • Garlic powder
  • Red pepper flakes
  • Butter
  • Lemon juice
  • Fresh dill finely chopped
  • Fresh capers

Foil pack rainbow trout is SO easy to make! Start by cleaning your fish and scape off the scales using a serrated knife. Simply mix all dry ingredients together well so you have an even spread of ingredients across the fish. Massage the oil into the flesh, then do the same thing with the fresh lemon juice. Sprinkle seasoning evenly over and rub in. Don’t forget the butter! Add the butter to the top of the fish so it melts all over the filet. Chop the fresh dill very finely and set aside. Roll the top of foil over tightly and bake at 350 degrees for just 15 to 18 mins! Remove from the oven and very carefully unroll the foil. Sprinkle the capers and dill over the top and serve with a lemon wedge.

Removing skin from fish

Clearly, no one wants to eat soggy skin, but you can leave it on if it makes life a little easier. Once you dig your fork in, the skin will release from flesh. If you wish to remove the skin, you could very carefully flip the fish and peal the skin right off. Becarful not to break the filet. Or using a spatula, carefully place the it between the flesh and the skin and slowly scoop the fish up.
